Open Source is a collaborative wine made by the members of the Winemaker’s Co-Op. The original source fruit - 1,000 pounds grown by each member winery - includes all five Bordeaux varieties. The grapes were divided equally among the five winemakers, each using their own techniques in the cellar to craft a unique version of this wine. Open fermentation and 30 months in barrel lent depth and character. An earthy nose with whispers of espresso and tart cranberry gives way to a palate marrying cherry cola, wineberry, and a savory component - think fresh mushrooms. With plenty of grip, this robust red could easily stand up to steak au poivre or a bone-in pork chop topped with a dijon mustard sauce.
